an interactive online course that consists of seven modules:
- Cheese Basics gives an overview of basic cheese types and

- Soft Cheese covers Feta, Brie, Fresh Mozzarella, Chevre, Queso
Blanco, and Queso Fresco
- Semi-Soft Cheese covers Mozzarella, Havarti, Monterey Jack,
Port Salut, and Limburger.
- Semi-Hard Cheese teaches about specialty Cheddar, Baby Swiss,
Emmental, Gouda, Edam, and Colby/Colby Jack

and Stilton.
- Putting It All Together – Cheese uses a customer
interaction scenario to help associates apply their knowledge for higher
sales.
- Hard Cheese discusses Parmesan, Parmigiano-Reggiano, Romano,
Pecorino Romano, Gruyère, and Appenzeller.
