The impact of the COVID-19 pandemic has had far-reaching implications in our industry, especially on in-store delis, bakeries, and prepared-food programs. Since March, many retailers have had to temporarily close, limit, or adjust operations in their departments, especially self-serve cases and product sampling. As the pandemic continues across the nation and the world, many retailers are asking the question, "What are considerations for re-opening sectors in my fresh departments, while minimizing risk to shoppers and store employees?"
