Auricchio is a fifth-generation Italian cheesemaker. His family emigrated from Italy and his father founded BelGioioso Cheese. Auricchio began his cheese career in operations at BelGioioso and then moved to directing the sales side of the company. Today, Auricchio acts as Executive Vice President and oversees all aspects of the business. He graduated from Northwestern University in Illinois with an economics degree. He served the IDDBA on the Executive Committee as Chairman of the Board and many other committees.
